Descripción: They have demonstrated being deserving of the title "signature cuisine". This is not something which happens by chance or a sign of luck, it´s use expresses that the chef to which it alludes has covered a long journey of ineludibly outside ideas, in order to one day find himself alone with his work. In cooking, everything begins with breaking away from conventional ideas. Some chefs become demoralised in the search for something different, new flavours, other harmonies, and unusual textures. The vocation "New Cuisine" cost hard work, sweat and tears, not only to conceive and compose, but also to achieve someome to sample it, up until then we were packedwith food and no-one proposed that quantity was exchangeable to quality. Later false prophets and imitators arrived and made millions of copies of masterpieces, some acceptable but the majority grotesque. This is how, in defense of culinary creativity, the denomination "signature" arose, making the designs of the dishes personal, as in the case of Jesus Gonzalez and his signature Canarian cuisine.
